Sample Menu - Sunday

Malibu Chicken
1 cup water 6 slices ham
1 teaspoon chicken 6 slices Swiss cheese
bouillon salt and pepper to taste
6 boneless chicken breasts
Bring water to a boil in large skillet. Add bouillon and stir until dissolved. Remove from heat. Add chicken breasts and marinate for 15 minutes, turning frequently. Cook for about 20 minutes, turning every 10 minutes until no longer pink inside. Place a thin slice of ham and a slice of cheese on top of chicken. Cover and cook for another minute or until cheese starts to melt.

Mashed Potato Casserole
6 potatoes ½ teaspoon onion salt
¼ cup butter, softened ½ teaspoon garlic powder
¼ cup milk 1 cup shredded cheese
Wash and peel potatoes. Cut into pieces and place in large saucepan. Add 2 inches of water. Cover and heat to boiling over high heat. Reduce heat just enough so water keeps boiling. Cover and cook for 20 minutes or until tender when pierced with a fork. Drain. Add butter and mash potatoes with a potato masher or electric mixer until smooth. Add milk in small amounts, beating after each addition until potatoes are smooth and fluffy. Stir in remaining ingredients except cheese. Put into lightly greased casserole dish. Bake at 375 for 10 minutes. Sprinkle cheese on top and bake for another 10 minutes.

Stir-Fried Green Beans
1 tablespoon butter 1 garlic clove
1 lb. fresh green beans or ½ teaspoon marjoram
2 cups frozen green beans
Melt butter in skillet. Add beans. Cut garlic in half and add to beans. Cover and cook on med heat for 5 minutes or until beans are crisp-tender stirring occasionally. Increase heat to medium-high and stir-fry with large spoon about 2 minutes. Stir in marjoram. Discard garlic.

Strawberry Fruit Salad
2 red apples ¼ cup raisins
1 cup sliced strawberries ½ cup strawberry yogurt
1 cup green grapes ¼ cup sliced almonds
Core and chop unpeeled apples and place in a bowl. Add strawberries, grapes, and raisins. Fold in yogurt. Cover and refrigerate at least 30 minutes. When ready to serve stir in almonds.

Cinnamon Crinkles
½ cup butter 1 teaspoon soda
½ cup shortening ¼ teaspoon salt
1 ½ cups sugar 1 teaspoon cream of tartar
2 eggs 3 tablespoons sugar
3 cups flour 1 tablespoon cinnamon
Beat together in mixer bowl butter, shortening, 1 ½ cups sugar and eggs until creamy. Add flour, soda, salt, cream of tartar and mix thoroughly. Roll dough into balls the size of a walnut. Mix remaining sugar and cinnamon. Roll balls in sugar mixture and place on ungreased baking sheet. Bake at 400 for 8 to 10 minutes or until edges start to brown. Makes 3 dozen.
