Sample Menu - Thursday
Meat Loaf
1 pound ground beef 8 saltine crackers, crushed
1 egg, beaten ½ cup tomato sauce
1 package onion soup ½ teaspoon salt
mix ¼ teaspoon pepper
Stir together egg, onion soup mix, crackers, tomato sauce, salt and
pepper. Mix in ground beef with hands until well blended. Shape into
loaf and place in foil-lined baking dish. Bake at 350 for 1 ½ hours.
Remove from pan and let sit for 15 minutes before slicing.
Baked Potatoes
6 potatoes sour cream
butter salt and pepper
Scrub potatoes. Prick with fork. Place in oven and bake at 350 for 1 to
1 ½ hours or until tender when squeezed gently. Cut an X in the top of
each potato and gently squeeze from the bottom to force potato open.
Serve with butter, sour cream, salt and pepper
Baked Banana Squash
1 ½ lbs banana squash
butter
salt and pepper
Place squash in baking dish with ½-inch water. Seal with foil and bake
at 350 for 1 hour or until tender. Remove squash from peel and mash
with butter, salt and pepper.
Waldorf Salad
4 apples ½ cup chopped walnuts
½ cup crushed pineapple, ½ cup raisins
drained ¼ cup salad dressing
½ cup chopped celery
Cut apples in fourths. Remove core and seeds. Slice each fourth and
place in serving bowl. Stir in remaining ingredients.
Brownie Pudding Pie
3 tablespoons cocoa ½ cup nuts
¼ cup butter, melted 6 oz. package instant
¾ cup sugar chocolate pudding mix
2 eggs 2 ½ cups milk
1 teaspoon vanilla whipped topping
½ cup flour 1 small chocolate bar
Stir cocoa and butter until smooth. Beat in sugar, eggs, and vanilla.
Mix in flour and nuts. Spread in greased pie pan. Bake at 350 for 30
minutes. Cool.
Pour milk in mixing bowl. Add pudding mix. Beat for 1 minute. Let stand
2 minutes. Spread over brownie. Top with whipped topping. Sprinkle with
grated chocolate bar. |
